In the new year, so many of us vow to eat better (even we dietitians), drink more water, cook more homemade meals and the list goes on.
One of my challenges is to eat more leafy greens – I get tired of salads quickly and I’m not one to drink my greens (no kale smoothies on my blog.) And I find it extra hard to get my greens in during the winter months.
So, I tapped into my Pennsylvania dietitians to share their favorite, delicious recipes featuring spinach, kale, collards, Swiss chard and more (including a few of my go-to greens recipes this time of year.)
Potato Leek and Kale Soup – Kelly Jones @Eat Real. Live Well
Collard Greens with a Twist – Zach Breeding @ The Sage
Vegetarian Harvest Bowl – Jess DeGore @Dietitian Jess
Kale and Cheddar Frittata – Jen Pullman @Nourished Simply
Greens, Dried Plums and Squash – Leslie Bonci @Active Eating Advice
Roasted Cauliflower and Chickpeas with Chard and Feta – Roseanne Rust @Chew The Facts
Eggplant, Red Pepper and Spinach Farro – Kelly Jones @Eat Real. Live Well
And here are my two “go-to” recipes for eating more greens: Cheesy Broccoli & Greens Soup – I make this at least twice a month in the winter. Asian Style Winter Greens – Great side dish for fish, chicken or rice dishes.
