It’s that time of year! We are mid-August which means the kiddos are heading back to school very soon! One of the questions I get asked most by parents (and everyone really) is what are quick and healthy weeknight dinner recipes. So I’m rounding up our PA dietitian bloggers personal favorite back to school recipes!

Perfect for fueling student athletes this recipe is posted below:
½ cup honey roasted peanuts
½ cup roasted sunflower seeds, shelled
2 cups mixed raisins/craisins
1.5 cups dry oats
2 cups Crispy rice cereal
1 cup peanut butter ( creamy or crunchy)
¾ cup honey
1 teaspoon vanilla extract
Directions: Combine peanuts, sunflower seeds, dried fruit, oats, and Crispy rice cereal in a large bowl. In another bowl combine peanut butter, honey and vanilla.. Stir until mixed and add to the dry ingredients and stir well. Roll into balls about the size of a quarter and put on cookie sheets, Can freeze until firm.
